How Often Should a Commercial Kitchen Exhaust Be Cleaned in the UAE?

Every commercial kitchen builds up grease in its exhaust system. The real question is how fast. Cleaning too rarely lets grease collect in the hood, filters, duct and fan, where it reduces airflow and adds to fire risk. This guide explains how often a kitchen exhaust system should be cleaned and what affects that schedule.

The standard most kitchens follow: NFPA 96

NFPA 96 is the international standard for ventilation control and fire protection of commercial cooking operations. It sets inspection and cleaning intervals based on how much and what kind of cooking the kitchen does:

  • Monthly: systems serving solid-fuel cooking
  • Quarterly: high-volume cooking such as 24-hour operations, charbroiling or wok cooking
  • Every six months: moderate-volume cooking
  • Yearly: low-volume cooking, such as seasonal or occasional kitchens

Local authorities and your insurer may set their own requirements on top of this. Check what applies to your premises with the relevant authority, and keep your cleaning records.

What changes how often you need cleaning

  • Cooking volume and hours: a kitchen running 14 hours a day builds grease much faster than one open for lunch only
  • What you cook: fried, grilled and charbroiled food produces more grease than boiling or baking
  • The system itself: long duct runs and rooftop fans collect grease in places you can't see
  • Filter condition: clogged or poorly maintained filters push grease further into the duct

Signs your exhaust system is overdue

  • Grease dripping from the hood, filters or duct access panels
  • A strong smell of old cooking oil in the kitchen or dining area
  • Smoke or heat that doesn't clear as quickly as it used to
  • A noisy or struggling exhaust fan
  • Visible grease film on the fan blades or rooftop around the exhaust outlet

What a full exhaust cleaning covers

A proper cleaning treats the whole system, not just the part you can see. That includes the hood canopy, the grease filters, the full length of the duct, the exhaust fan, and the ESP unit where one is fitted. Cleaning only the hood and filters leaves most of the grease in the duct.
