A cloud kitchen, also called a dark or ghost kitchen, cooks food for delivery only, with no dining room. Its exhaust system still works as hard as a restaurant's, and often harder. This guide explains why cloud kitchens build up grease quickly, what is different in a shared building, and how to plan the cleaning around delivery orders.
Why do cloud kitchens build up grease quickly?
Grease builds up in proportion to how much a kitchen cooks and for how long. Many cloud kitchens take orders for most of the day and late into the night, and a delivery menu can include a lot of fried and grilled food. That puts a large amount of grease through the hood, filters, duct and fan.
The NFPA 96 benchmark puts high-volume cooking, including 24-hour operations, on a quarterly cleaning schedule. A cloud kitchen that cooks most of the day may fall into that category, so work out your own category and do not assume a yearly clean is enough. Our guide on how often to clean a commercial kitchen exhaust explains the intervals. NFPA 96 is a U.S. standard, so check what your landlord and insurer require as well.
What changes in a shared cloud kitchen building?
Some cloud kitchens are single units. Others are shared buildings where several operators cook under one roof, each with their own hood but connected to a common duct or rooftop fan. Check these points before you book:
- Who is responsible: your lease or the building operator's rules usually say whether the landlord arranges the cleaning of the shared duct and fan, or each operator does
- Where your hood connects: ask whether it has its own duct and fan or shares them
- Who has to stop cooking: a shared duct or fan should not be cleaned while the kitchens connected to it are cooking, so every operator on the system has to agree on a time
- Who receives the report: ask for a report that covers your hood and the shared parts, so you can keep your own record
How do you plan the cleaning around delivery orders?
A cloud kitchen has no quiet season, so the visit has to fit around the orders. We work day and night shifts, so a cleaning can be arranged outside your busiest delivery hours, including overnight. In a shared building, agree one time with the building operator and every kitchen on the system, so nobody has to switch off in the middle of service.
We inspect first and recommend only what the system needs, so the plan matches how your kitchen really cooks.
What should the cleaning cover?
A proper clean treats the whole path the grease travels, not only the hood you can see. That means the hood canopy, the grease filters, the full length of the exhaust duct, the exhaust fan, and an ESP or ecology unit where one is fitted. Our complete exhaust system cleaning covers all of it in one visit, and every job ends with a company-attested report that includes before and after photos and recommendations.
What can your team do between cleanings?
Staff look after the parts built to be removed and wiped: the grease cups, the filters and the outside of the hood. In a kitchen that runs most of the day, filters usually need washing daily to weekly, depending on how much you fry and grill. Our kitchen exhaust maintenance checklist lists the daily, weekly and monthly checks, and how to clean a commercial kitchen hood has the steps.
What to ask a contractor
- What the visit covers: hood, filters, duct, fan and any ESP or ecology unit
- Whether they can work overnight, so you do not lose orders
- How they reach the roof or riser in your building, and what access they need from the landlord
- What you receive afterwards: a written report with before and after photos and recommendations
- Whether they inspect first and quote after seeing the system

Frequently asked questions
How often should a cloud kitchen clean its exhaust system?
It depends on how much and how long you cook. The NFPA 96 benchmark puts high-volume cooking, including 24-hour operations, on a quarterly schedule and moderate-volume cooking on a six-monthly one. An inspection of your system shows how fast grease is building up.
Who is responsible for exhaust cleaning in a shared cloud kitchen building?
Your lease or the building operator's rules usually say. Ask whether the landlord arranges the cleaning of the shared duct and fan or each operator does, and agree one time for everyone on the system.
Can exhaust cleaning be done at night so we do not lose orders?
Yes. We work day and night shifts, so a visit can be arranged outside your busiest hours. Message us on WhatsApp to plan it.
Do you clean cloud kitchens in every emirate?
Yes. We serve kitchens across all seven emirates, including Dubai, Abu Dhabi and Sharjah.
